Pubbelly Boys are Now on a Boat

Get your towels ready. That’s right… we’re on a boat! Straight flowin’ with the Pubbelly Boys, aboard the Norwegian Escape to celebrate the launch of Jose Mendin’s new e-cookbook, Food Republic.

It has been a few weeks since we took off our flippie-floppies, but some of us still feel like we are sailing in the deep blue sea. On this recent trip, we were invited to tour the kitchen at Food Republic inside Norwegian’s newest ship, Norwegian Escape. Chef Mendin walked us through each station from a sushi bar and hot grill to the demo space set up to show us how to prepare his remarkable tuna salad.




Here’s how the boys got on deck: After testing over 110 recipes, the Pubbelly Boys –comprised of Jose Mendin, Andreas Schreiner and Sergio Navarro—finalized the menu for Food Republic. It features many of our favorite dishes from their restaurants on land, while also broadcasting Mendin’s multi-ethnic recipes made for the sea. Queue in the Hungries, and all we had to do was enjoy the fruit of their labor. Now you can, too, right at home with the 47-page digital cookbook that includes 30 inspired recipes from Mendin’s pantry.

We volunteered to try all 30—just for you—but here’s what really went down. Food fairies from every corner brought out beautifully plated dishes (equally tasty) like the Butter Crab Roll, Short Rib Dumplings, and Hamachi Taquitos. The natural light coming in from the windows made the experience divine and had foodies standing on their chairs to snap that bird’s-eye view.
